White Bean Sausage Skillet

Protein-rich butter beans and sausage form the hearty base of this one-skillet meal. With nourishing bone broth and flavourful coconut milk, plus spinach, and a medley of herbs, it's the perfect healthy dish to batch cook and enjoy all week long.
Ingredients

2 tbsp olive oil

1 small onion, diced

1 clove garlic, crushed

4 sausages, sliced or removed from casing

1 can diced tomatoes

1/4 cup tomato paste

1 can butter beans

1 tsp each thyme, oregano

1 cup bone broth

1/4 cup coconut milk

1 packed cup raw spinach

1/4 cup fresh parsley, chopped

1/3 cup shredded cheddar
Directions
In a large skillet over high heat, sautée onion until translucent
Add garlic, mix for another minute
Place sausage in pan and cook until begins to brown
Stir in tomatoes, paste, beans and broth
Season with salt, pepper, thyme and oregano
Reduce heat to medium and cook until liquid reduces (about 15 min)
Stir in coconut milk and spinach
Cook until spinach wilts
Lightly season with salt and pepper to taste
When the sauce reaches desired thickness, garnish with parsley and cheese
Serve with fresh crusty bread
