Crispy Maple-Chili Chicken with Roasted Veggies & Chickpeas

Crispy chicken thighs with roasted vegetables and chickpeas, finished with a maple-chili glaze for balanced flavour and easy weeknight comfort.
Ingredients
- 6 bone-in, skin-on chicken thighs (about 2 lb / 900 g)
- 1 large sweet potato, cut into 1-inch cubes
- 2 cups Brussels sprouts, trimmed and halved
- 1 can (15 oz / 398 mL) chickpeas, drained, rinsed, and patted dry
- 2 Tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- Sea salt and freshly cracked pepper, to taste
- 3 Tbsp pure maple syrup
- 1 Tbsp Dijon mustard

- 1 ½ tsp chili flakes (or use 1 tsp for mild heat)
- 1 clove garlic, finely grated
- ½ tsp sea salt

Maple-Chili Glaze
Directions
Preheat the oven to 425 °F (220 °C). Line a large baking sheet with parchment paper.
Pat the chicken dry. This is key for crispiness. Arrange the thighs skin-side up on the pan, leaving space between each.
Add the vegetables. Scatter sweet potato cubes, Brussels sprouts, and chickpeas around the chicken.
Drizzle everything with olive oil, sprinkle with paprika, garlic powder, salt, and pepper, and toss the vegetables lightly to coat (keep the chicken skin untouched so it crisps).
Roast for 20 minutes. Meanwhile, whisk together all the glaze ingredients in a small bowl.
Brush with glaze. After 20 minutes, remove the tray and brush the chicken generously with the maple-chili glaze. Spoon a little over the veggies too.
Return to the oven for another 20–25 minutes, or until the chicken skin is golden and internal temperature reaches 165 °F (74 °C).
- Optional final glaze. For extra gloss and flavour, brush once more with any remaining glaze during the last 5 minutes.
- Serve. Spoon roasted vegetables and chickpeas onto plates, top with a crispy chicken thigh, and drizzle with any pan juices. Finish with a squeeze of lemon or lime for brightness.
