An easy one-pan lemon garlic Parmesan chicken with roasted vegetables, baked in the oven for a simple, flavourful weeknight meal.
Ingredients
- 4 chicken breasts or thighs (boneless or bone-in)
- 3 tbsp olive oil
- Zest + juice of 1 lemon
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt & freshly ground black pepper
- ½–¾ cup freshly grated Parmesan

Broccoli florets: 1½ cups

Brussels sprouts: 1½ cups, trimmed and halved

Carrots: 1 cup, sliced on the bias

Zucchini or yellow squash: 1 cup, sliced

Red onion: 1 medium, cut into wedges (about 1 cup)

Bell pepper: 1 cup, sliced

Cauliflower florets: 1½ cups

Directions
- Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper.
- Toss the vegetables with 1½ tablespoons of olive oil, a pinch of salt, and pepper. Spread them evenly on the sheet pan.
- If using firmer vegetables like Brussels sprouts, carrots, or cauliflower, roast them for 10 minutes first.
- In a bowl, combine the remaining olive oil, lemon zest, lemon juice, garlic, Italian seasoning, salt, and pepper. Add the chicken and coat well.
- Remove the pan from the oven (if pre-roasting vegetables) and nestle the chicken among the vegetables. Add quicker-cooking vegetables at this point, if using.
- Sprinkle Parmesan generously over the chicken and lightly over the vegetables.
- Return the pan to the oven and roast for 35–45 minutes, stirring vegetables once halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- For extra colour and crisp edges, broil for 2–3 minutes at the end.
- Remove from the oven and finish with a squeeze of fresh lemon and herbs, if using.
