Warming Turmeric Lentil Soup

Nothing heals the body + soul quite like a bowl of steaming soup packed with warming spices, protein, even Ayurvedic healing properties!
Ingredients
- 1 cup red lentils, rinsed
- 1 tbsp olive oil
- 1 sweet onioin, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 tsp turmeric powder
- 1/2 tsp paprika
- 1 cup coconut milk
- 4 cups broth or water
- 1 carrot diced
- 1 handful kale, chopped
- Juice of 1/2 lemon
- 1 tsp sea salt and pepper (to taste)
Directions
Heat oil In a large pot over medium heat.
Add onion, garlic, and ginger, sauté until softened
Stir in turmeric and paprika. Cook for 1 minute
Add lentils, carrot, coconut milk and broth.
Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, until lentils are soft
Stir in kale, cook for 2-3 minutes until wiltedAdd lemon juice and season with salt and pepper to taste
Serve hot, garnish with parmesan cheese or a dollop of plain yogurt if desired
