If the way to a person’s heart is through their stomach, this might be the sweetest way to say “I love you!” Made with a healthy and delicious sweet potato crust, and topped with ruby red pomegranate seeds that burst with flavour, this heart-shaped pizza is the ultimate Valentine’s Day meal.
Ingredients

1 cup pureed sweet potato

1 1/2 cup almond flour

1/2 cup oat or rice flour

1 tsp. garlic powder

1 tsp. salt

3/4 cup basil pesto
-
1 cup arugula
-
1/4 cup goat’s cheese

1/4 cup pomegranate seeds

Drizzle balsamic glaze
Directions
Preheat oven to 350 C
In a bowl mix sweet potato puree, flour, garlic and salt
Transfer to a parchment paper lined baking sheet and flatten into a heart shape or circle
Bake for 30-40 minutes until the edges start to crisp (time may vary based on thickness of dough)
Remove from oven and top with pesto, arugula, pomegranate seeds
Finish with drizzle of balsamic glaze
