
Sugar Snap Pea & Mint Soup

Light and flavourful soup - just as good cooled as it is hot!
Ingredients
- 1 tbsp olive oil or ghee
- 1 small leek or a few green onions, sliced
- 3 cups sugar snap peas or snow peas, trimmed
- 2 cups vegetable or chicken broth
- 1 small handful fresh mint leaves
- 1 small handful parsley (optional)
- Zest of ½ lemon

Sea salt + cracked pepper - to taste
Directions
Heat the oil in a pot over medium heat. Sauté the leek or green onions until soft, about 3–4 minutes.
- Add the sugar snap peas and broth. Simmer gently for 4–5 minutes, just until the peas are tender and vibrant.
- Remove from heat. Stir in mint, parsley (if using), and lemon zest.
- Blend until smooth with an immersion blender or in batches. Taste and season with salt and pepper.
- Serve warm with a swirl of coconut milk or a small spoonful of yogurt, if desired.
Recipe Note
Optional: swirl of coconut milk or a dollop of plain yogurt to finish.
This soup is also yummy chilled—store in the fridge and serve cold with fresh mint and lemon zest on top.
