Shrimp Spring Rolls

These homemade rolls are a more satisfying alternative to ordering in. Enjoy a healthy and delightful combination of shrimp, crisp vegetables, and fresh herbs, all wrapped in delicate rice paper.
Ingredients
- Rice paper wraps - one per roll
- 6 steamed shrimp
- 1 bell pepper
- ½ cucumber, peeled and cored
- 1 fresh mango
- ½ purple cabbage
- ½ ripe avocado
- Lettuce
- Cilantro or parsley
- Avocado oil, or any high-heat oil (optional)
- Soy sauce, gluten-free tamari, or sweet chili sauce
Directions
One at a time, soak each wrap in water until soft (about 30 seconds)
- Cut all vegetables ingredients into strips
- Place a bit of each ingredient in the upper ¼ of each wrap
- Fold in the wrap sides, then roll as tightly as you can (without ripping)
- Heat oil to high in a frying pan
- Fry/sear each roll until it becomes crispy, turning once
- Serve with dipping sauce
