Quinoa Chicken Salad

Ingredients
- 2 boneless chicken breasts or protein of choice
- 1 cup cooked quinoa
- 2 cups chopped lettuce
- 1 cup white beans, drained and rinsed
- 1 cup protein of choice
- ½ cup shredded carrots
- ½ cup goat’s cheese, crumbled
- ¼ cup toasted pine nuts
- Handful of dried cranberries
- ¼ cup apple cider vinegar
- 1 tbsp honey mustard
- ¼ cup extra virgin olive oil
- Salt and pepper to taste

Directions
Preheat oven to 375°F
- Coat the chicken with dijon mustard and bake for 20-30 minutes
- Slice chicken into 1 inch slices
- Place all salad ingredients into a large bowl
- Dress, toss, and enjoy
