Melon Prosciutto Arugula Salad

This sweet ‘n salty salad is a complete meal on a platter. Prosciutto and melon, tangy artichoke hearts and sharp arugula fuse together and can be dressed up or down to suit the occasion.
Ingredients
- 3 packed cups baby arugula
- 10 pieces prosciutto ham
- ¼ cantaloupe melon, cut in bite-sized pieces
- 6 jarred artichoke hearts, quartered
- 2 hard boiled eggs
- ½ cup raw green beans
- Aged parmesan cheese curls
- ½ cup extra virgin olive oil
- ⅓ cup apple cider vinegar
- 2 tbsp honey
- 2 tbsp dijon mustard
- Flaky salt
- Ground pepper
Dressing
Directions
On a flat platter, spread a bed of arugula
- Arrange the rest of the ingredients on top
- Toss with dressing
- Top with parmesan curls
