There’s few dishes cuter than these protein-packed Jack-o-lantern peppers. They’re especially fun for kids leading up to Halloween (but don’t be surprised if they ask for them long after October too!).
Ingredients

4 orange bell peppers

2 1/2 tbsp olive oil (used separately)

1 cooking onion, diced

1 clove garlic, crushed

1 lb ground beef/turkey/chicken

1 can baked beans

1/4 cup tomato paste

1 can diced tomatoes
-
1 cup cooked rice/quinoa
-
1 cup cheddar/mozzarella/parmesan cheese, shredded
Directions
Preheat oven to 400° F
Slice top off peppers, scoop out inside and carve face with a small knife
Brush inside of peppers with oil and bake for 10 minutes. Remove from oven and set aside
In a large saucepan over medium-high heat 2 tbsp oil
Sauté onion until translucent, then add garlic. Continue cooking for 1 minute
Add ground meat, stirring until browned
Add tomatoes, paste, and beans
Reduce heat to medium, and cook until the sauce thickens (about 15 min)
Stir in rice or quinoa
Stuff each pepper with mixture, top with cheese
Bake until cheese bubbles (about 10 minutes)
Remove from oven, replace top of pepper and serve
