Hoisin Chicken Lettuce Wraps

One of my favourite Chinese food dishes is this lettuce wrap and it tastes even better than takeout, and it’s definitely healthier. Get ready for a guilt-free party in your mouth!
Ingredients
- 1 small head of iceberg, boston or butter lettuce
- 1 lb ground chicken
- 1 tbsp sesame oil
- ¼ cup diced onion
- 1 clove garlic, crushed
- ½ tsp ground ginger
- ¼ cup diced carrot
- ¼ cup diced celery
- ¼ cup diced bell pepper
- 2 tbsp soy sauce (or gluten-free tamari)
- 3 tbsp hoisin sauce, used separately
- ½ cup cashew nuts
Directions
Separate the lettuce into bowl-shaped leaves
- Heat oil a large skillet on medium heat
- Sauté onions until clear, then add garlic
- Stir fry chicken for 4-5 minutes, until browned
- Add all vegetables and cook for 2 minutes
- Add soy sauce and hoisin and mix well
- Spread about a tbsp of hoisin into each lettuce leaf, then fill with about ¼ cup of chicken mixture
- Fold the lettuce wrap and enjoy!
