Hearty Minestrone Soup

Ingredients
- 2 tbsp olive oil
- 1 cooking onion, diced
- 2 stalks celery, chopped
- ½ fennel chopped
- 3 carrots, chopped
- 3 cloves garlic, crushed
- 1 cup spinach, chopped (or baby spinach)
- 1 14oz can red kidney beans, rinsed and drained
- 1 14oz can cannellini beans, rinsed and drained
- 1 28oz Italian style crushed tomatoes
- 2 tbsp tomato paste
- 6 cups broth
- 1 cup dried macaroni noodles
- 1 tbsp hot sauce
- Salt and pepper to taste
Directions
In a large pot heat oil on high heat
Add all the chopped vegetables and garlic and sautée for 10 minutes
Add tomatoes, tomato paste, beans, broth, and pasta
- Bring to a boil, then reduce heat and simmer for about 40 minutes
Add spinach, mixing until it wilts
- Season with salt, pepper and hot sauce to taste
