Healthy 'Snickers'

When those 3pm cravings kick in, this is the snack I reach for. The dates provide a sweet fix, while the nuts offer a dose of protein to fuel me through the afternoon. No wonder it’s one of my most popular recipes.
Ingredients

20 pitted medjool dates

1/2-3/4 cup natural peanut butter

12 oz semi-sweet chocolate chips

1 tsp. coconut oil (optional)

1/2-1 tsp flaky salt

1/2 cup chopped peanuts/almonds
Directions
Line a small baking sheet with parchment paper or waxed paper
Place each date closely together to line fill the sheet - skin side down
Flatten well, place a second piece of paper over the dates and roll well with a rolling pin or glass. Remove the top paper
Mix the peanut butter well and spread over the dates
Melt the chips and oil in a double boiler on the stove or in the microwave, mix well
Pour the chocolate over the peanut butter and spread evenly using an icing knife
Top the chocolate with the chopped nuts and flaky salt
Once cooled, cut into portioned squares with a sharp knife
