I love this Goulash Soup! It’s my go-to during chilly winter months when I’m craving something warm and hearty to nourish and energize me. With a mix of vegetables, potatoes, beef, and herbs, it’s truly a whole meal in one soup!
Ingredients

1-2 tbsp olive oil

1 onion, diced

2 cloves garlic, crushed

2 lbs ground beef or 2 lbs cubed chuck roast (1/2 inch cubes)

1 medium green pepper, diced

2 large carrots
-
1 large rib celery, chopped
-
12 oz potatoes, cut 1 inch cubes

4 cups bone broth
-
4 cups water
-
1 cup crushed tomatoes

1 tbsp red wine vinegar

1/8 cup fresh flat leaf parsley, chopped
Directions
Heat oil in large Dutch oven or heavy soup pot over medium high heat
Working in batches, brown beef adding oil as needed - set aside
Refresh oil and add onions and celery, cook until softened
Add garlic, and tomato, stirring for a couple of minutes
Return beef to the pot, stir to coat
Add broth and water. Bring to a boil, then reduce heat to medium-low. Simmer with lid slightly ajar for 30 minutes
Add carrots, peppers and potatoes, bring back to a simmer for 25-30 minutes until potatoes pierce easily
Add vinegar, stir well
Let soup ‘rest’ for 15 minutes, add parsley and season with salt and pepper to taste
