This is sunshine on a plate! If you want a salad that's fresh, filling and totally delicious, this one's for you!
Ingredients

1 can chickpeas (rinsed & drained)

2 cups baby spinach or mixed greens

1 orange, peeled & sliced
-
½ grapefruit, peeled & sliced

½ avocado, sliced

¼ cup feta
-
¼ cup toasted pumpkin seeds

2 tbsp fresh mint
-
2 tbsp olive oil
-
1 tbsp raw honey or maple syrup

Juice of 1 lime
-
1 tsp Dijon mustard

Salt & pepper to taste

Directions
Whisk together olive oil, honey, lime juice, Dijon, salt & pepper
Add chickpeas, greens, citrus, and ovocado to a large bowl or platter
Drizzle with dressing
Sprinkle on feta, pumpkin seeds, and fresh mint
