It’s time to banish dry chicken sandwiches for a sweet-savoury restaurant-worthy combination. You can prepare the chicken specifically for the sandwich, or slice last night’s chicken dinner for next-day lunch.
Ingredients
- Crusty bread of choice
- 1 chicken breast
- Tomato slices
- Lettuce
- 2 tbsp dijon mustard
- 2 tbsp goat’s cheese
- Apple slices
- ½ cup baby arugula
- Raw honey

Directions
Preheat oven to 375°F
- Spread dijon mustard on chicken then bake for 25-30 minutes
- Slice into thin pieces
- Lightly toast bread. Spread dijon on one slice and goat’s cheese on the other
- Assemble the rest of the ingredients in the sandwich, drizzling a bit of honey on the chicken
