Butternut Squash & Carrot Soup

If fall were a soup, this would be it! The perfect mix of seasonal sweet butternut squash and tangy carrots blend together into a heavenly flavour that warms the body and soul.
Ingredients
- 2 tbsp olive oil
- 1 sweet onion, roughly chopped
- 1 butternut squash, cubed
- 4 larg carrots, chopped
- 1 large apple, cored and chopped
- 2 celery stalks

4 cups stock of choice
- 1 tbsp sea salt
- Fresh ground pepper
- 1 tbsp maple syrup or brown sugar (optional)
Directions
In a large pot over medium-high heat, heat oil
Add onion and cook until they begin to soften
Add squash, carrots, apple and celery, mixing for a few minutes until they begin to soften
Pour in stock and bring to a boil
Reduce heat to medium and simmer until everything softens (about 30-40 minutes)
Once soft, blend with a stick blender or transfer to blender until smooth
Season with salt, pepper and syrup to reach preferred flavour
Transfer to bowls and serve
