- 1 clove garlic, crushed
- 1 tsp onion powder
- Salt and pepper
BBQ Sauce
Directions
Sauce
Whisk the ingredients in a small pot, over medium-low heat, and simmer uncovered for 10 minutes
- To prevent splattering, lean the pot lid over the pot, but don’t cover it
- Remove from heat and allow to cool
Chicken
Pat the chicken pieces dry and season with salt and pepper
- Preheat the grill to 400°- 450°F
- Place chicken fat-side down on the grill or a grill mat ( to prevent sticking) for 4-5 minutes
- Flip and grill for another 4-5 minutes
- Using a BBQ brush, baste with sauce, flip, and cook for 1-2 minutes
- Repeat on the other side
- With a meat thermometer, check that the chicken is just under 160°F and the juices run clear
- Remove from grill and allow to rest for 5 minutes
