This quinoa bowl is light, fresh and easy to make! It's packed with flavour and can be a side dish or nourishing meal.
Ingredients

1 cup cooked quinoa (or brown rice)

1 cup cherry tomatoes, halved

1 zucchini, chopped
-
½ red onion, sliced
-
½ cup chickpeas
-
½ avocado, sliced
-
¼ cup fresh parsley or basil, chopped
-
2 tbsp toasted sunflower seeds (or pumpkin seeds)

2 tbsp tahini
-
1 tbsp olive oil
-
Juice of ½ lemon
-
1 tsp maple syrup
-
1 garlic clove, minced
-
2-3 tbsp water (to thin)

Salt and pepper to taste
Lemon Tahini Dressing
Directions
Preheat oven to 400 F
Toss zucchini, tomatoes, red onion, and chickpeas with olive oil, salt & pepper
Roast for 20 minutes
Cook 1 cup quinoa in 2 cups water or broth. Fluff with a fork & let cool slightly
Whisk tahini, olive oil, lemon juice, maple syrup, garlic, salt & pepper.
Add water to thin
Layer quinoa, roasted veggies, avocado, seeds & herbs
Drizzle with dressing & enjoy
