Quinoa Black Bean Garden Salad

When you want a salad that doubles as a meal, make this one! Full of protein, complex carbs and veggies everyone will be thrilled to dig in.
Ingredients
- Spring mix lettuce
- 1 cup quinoa cooked
- ½ cup black beans
- ½ cup canned sweet corn
- ½ bell pepper, diced
- 2 mini cucumbers, diced
- 1 spring onion, sliced
- 6 cherry tomatoes, halved
- ½ sweet potato, baked (40 minutes at 400°F) and cubed
- 1 tbsp fresh parsley or cilantro
- ⅓ cup extra virgin olive oil
- ¼ cup apple cider vinegar
- 1 tbsp balsamic vinegar
- 1 tbsp dijon mustard
- 1 tbsp maple syrup
- Salt and pepper to taste

Directions
In a large bowl, add all salad ingredients and toss
- In a separate smaller bowl, whisk together the dressing ingredients and pour over salad
- Toss and serve
