Mushroom Cheddar Frittata

This savoury treat includes mushrooms, creamy Greek yogurt, and sharp cheddar cheese. It can show up on any menu for brunch, lunch, or light dinner.
Ingredients
- 2 tbsp olive oil
- 16 oz white or button mushrooms, sliced
- 8 eggs
- 1 cup old cheddar cheese, shredded
- ¼ cup plain greek yogurt
- ¼ cup chopped scallions, green part only
- ¼ tsp sea salt
Directions
Preheat oven to 400°F
- Heat the oil in a large skillet over medium high heat. Add mushrooms, stirring occasionally until browned and all liquid has evaporated, about 10 minutes
- In a bowl, beat the eggs with the yogurt, salt, scallions, and cheese, mixing well
- Pour the mushrooms into in the egg mixture and mix it gently.
- Transfer to a baking dish
- Bake for 20-25 minutes until the edges are brown, and the frittata is puffy and golden
- Remove and allow to cool for 10 minutes
