Mason Jar Salad

These are an easy make-ahead meal in a jar! They are packed with nutrients and flavour and are super portable.
Ingredients

1 cup quinoa, cooked

½ cup olive oil

¼ cup red wine vinegar
-
¼ cup plain yogurt
-
1 garlic clove, crushed
-
1 tbsp raw honey
-
1 tbsp chives, diced
-
½ cup pomegranate seeds
-
1 head romaine lettuce, washed and broken into bite sized pieces

½ cup shredded parmesan cheese or cheddar
-
1 cup black beans, cooked
-
1 cup cherry tomatoes, halved or quartered
Directions
In a small mixing bowl, whisk together oil, vinegar, yogurt, garlic, chives and honey
Spoon equal amounts into each clean mason jar
Divide cooked quinoa on top of the dressing
Layer each additional ingredient in each jar - pack well
Cover and refrigerate until ready to eat
Turn upside down onto a plate or bowl, toss and enjoy
