Kitchen Sink Quinoa Salad

As coincidental as it may seem, your fridge full of leftovers really can transform into a colourful, hearty, delicious salad. It’s as if you tossed in everything except the kitchen sink!
Ingredients
- 1 cup cooked quinoa
- ½ cup white or black beans
- ½ cup fresh or canned sweet corn
- 2 cups kale leaves, massaged and chopped
- ¼ cup flat leaf parsley, chopped
- ½ cup pomegranate seeds
- ½ cup shredded purple cabbage
- ¼ cup toasted almond slivers
- 2 tbsp diced spring onion or pickled onion
- ¼ - ½ cup crumbled feta cheese
- ⅓ cup extra virgin olive oil
- ¼ cup red wine vinegar
- ½ lemon, juiced
- ¼ cup sweet chili Thai sauce
- 1 tsp minced ginger
- Salt and pepper to taste

Directions
In a large salad bowl, toss together all salad ingredients
- Whisk together dressing ingredients and pour over salad
- Toss and serve
