Looking for a tasty way to boost your iron intake this winter? My Green Goddess Pasta is made with hearty spinach and iron-rich white beans, but the addition of parmesan, garlic, and basil give it a fresh flavour that’ll have you dreaming of summers on the Amalfi Coast.
Ingredients

3 oz fresh baby spinach

1/4 cup water

1 can white beans
-
juice from 1/2 lemon
-
1/4 cup nutritional yeast
-
1 handful fresh basil
-
4 cloves garlic
-
1/4 cup olive oil
-
1 tsp salt or more to taste

1/4 cup parmesan cheese
Directions
In a medium sized skillet on medium high heat, add water and spinach, cover to steam
When the spinach wilts, remove pan from heat
In a blender, add spinach and water, beans, lemon, nutritional yeast, basil, garlic, oil, salt and parmesan cheese
Blend until it reaches a sauce consistency
Pour over cooked pasta of your choice
