A quick and healthy way to use up chicken and veggies for a delicious balanced dish!
Ingredients

1 cup shredded rotisserie chicken

2 cups cooked rice (preferably day-old)

1 cup frozen peas & carrots

¼ cup frozen edamame, shelled

2 eggs, scrambled

2 tbsp soy sauce
-
1 tsp sesame oil
-
1 green onion, chopped
-
1 tsp garlic, minced
-
1 tsp fresh ginger, minced
Directions
Heat a large pan with a little oil, then scramble the eggs and set aside
Add garlic, ginger and veggies to the pan, stir-fry for 3 minutes
Add rice, chicken, soy sauce and sesame oil, stir-frying for 3-5 minutes
Stir in scrambled eggs and green onions. Done!
