Fresh Rice Paper Veggie Wraps

These Vietnamese-inspired rolls are fresh, not fried. Bursting with flavourful veggies, fruit, and herbs, they can be served as an appetizer with sauce or alongside a salad at lunchtime.
Ingredients
- Rice paper wrapper
- 1 cup cabbage, sliced
- ½ cup carrot, cut into strips
- ½ English cucumber, cut into strips
- ½ cup bell peppers, cut into strips
- ½ cup mango strips
- 2 tbsp cilantro or parsley
Directions
Put warm water on a plate and dip each rice wrapper for about 15 seconds The paper will remain firm, but will soften as filling is added
- About ⅓ from the bottom of the wrap, pile about 2 pieces of each filling ingredient
- From the bottom pull the wrap over the filling
- Fold the sides over the filling and keeping it snug, roll like a burrito
