Crispy Quinoa Edamame Kale Salad

If you haven’t tried crispy quinoa before, this recipe will get you hooked. Quinoa is a multifaceted grain that will give you your carbohydrates, protein, fibre, and vitamins. Baking it to crispy creates a crouton-like crunch that works well in many other dishes, too.
Ingredients
- 1 cup quinoa, cooked
- ½ cup kale, massaged and chopped
- 1 large carrot, peeled and shredded
- ½ cup pomegranate seeds
- ¼ cup chopped parsley or cilantro
- 1 cup steamed edamame beans
- ½ cup cucumber, diced
- ½ scallion, thinly sliced
- 2 tbsp olive oil
- Flaky salt
- Ground pepper
- ¼ cup sesame oil
- ¼ cup rice vinegar
- 1 tbsp peanut butter
- 1 tbsp maple syrup
- ½ inch ginger, grated
- ½ clove garlic, grated

Directions
Preheat oven to 375°F
- Place cooked quinoa on a parchment-lined baking sheet
- Drizzle olive oil and evenly mix through
- Spread quinoa in a thin even layer and sprinkle with salt
- Bake for 20-30 minutes, stirring at the 15-minute mark
- In a shallow bowl, place all salad ingredients
- Top with toasted crispy quinoa and sprinkle with salt and pepper to taste
- Add dressing, toss, and enjoy
