
Cottage Cheese Banana Cinnamon Muffins

These 'health food' muffins will please everyone, the kiddos, the health nuts, the celiacs and the regular foodies!
Ingredients

1 cup cottage cheese

2 medium ripe bananas, mashed

½ cup creamy peanut butter (optional)

2 tbsp melted coconut oil
-
¼ cup maple syrup
-
2 eggs
-
1 tbsp vanilla extract
-
1 ½ cup flour of choice
-
1 ½ tsp baking soda
-
½ tsp kosher salt
-
¼ cup coconut sugar or brown sugar
-
2 tbsp ground cinnamon
-
2 tbsp melted butter or ghee
Cinnamon Filling
Directions
Preheat oven to 350 F
In a blender, combine cottage cheese, bananas, peanut butter, coconut oil, maple syrup, eggs and vanilla
Blend until smooth, but slightly chunky for texture
Add dry ingredients, flour, baking soda and salt
Lightly blend until mixed (don’t overmix)
In a small bowl, mix sugar and cinnamon, then stir in melted butter
Divide the batter evenly into muffin cups
Drop a spoonful of cinnamon filling into each muffin and gently swirl with a toothpick (or small knife) to create cinnamon roll effect
Bake for 20-22 minutes, until muffins are golden and set
Let cool slightly, then enjoy warm!
