While some salads act as a sidekick to the main event, this one is worthy of hero status! Loaded with protein, veggies, nuts, and cheese, it is colourful, filling, and serves as a full meal.
Ingredients
- 1 cup cooked quinoa (cook according to package instructions)
- ½ cup white or black beans
- ½ cup corn niblets (canned or from a fresh cob)
- 1 packed cup kale, chopped and massaged
- ¼ cup flat leaf parsley, chopped
- ½ cup pomegranate seeds
- ½ cup purple cabbage, shredded
- ¼ cup toasted almond slivers
- 2 tbsp diced scallion or ¼ cup pickled onion
- ¼ - ½ cup crumbled feta cheese
- ⅓ cup extra virgin olive oil
- ¼ cup red wine vinegar
- ½ lemon, juiced
- ¼ cup sweet chili thai sauce
- 1 tsp ginger, minced
- Salt and pepper to taste

In a large salad bowl, toss all ingredients
