The flavour profile of this salad is off the scale! It marries the sharpness of arugula with the tanginess of apple and pomegranate seeds together with the liquorice hint in the fennel and the crunch of walnuts. Nothing boring here!
Ingredients
- 2 packed cups baby arugula
- 1 large fennel, sliced ¼ inch thin
- 1 large red or green apple, sliced in ¼-inch pieces
- ½ cup pomegranate seeds
- 1 cup walnuts, toasted and broken
- 2 tbsp extra virgin olive oil
- 2 tbsp aged balsamic vinegar
- Flaky salt and pepper
Directions
In a large salad bowl, place arugula, fennel, apple, walnuts, and pomegranate seeds
- Drizzle olive oil and balsamic vinegar
- Sprinkle with salt and pepper
- Toss and serve
