Ingredients
- Butter lettuce or spring greens
- 1 apple, thinly sliced
- 4 strawberries sliced
- 1 tbsp chopped parsley

1 tbsp chopped mint
- 1 tbsp toasted sunflower or pumpkin seeds
- ½ cup chopped rhubarb
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 2 tbsp olive oil
- Pinch of salt
Dressing
Directions
Simmer rhubarb with a splash of water and maple syrup until soft.
Blend with vinegar, oil, and salt.
Toss with greens, apples, herbs, and seeds.
