If you love the taste of pizza, but are looking for a high protein, low carb alternative, this dish is for you! I
Ingredients

½ bell pepper, sliced

10 mushrooms, sliced

¼ sweet onion, sliced

¼ cup pepperoni slices

1 cup cottage cheese
-
1 ¼ cup marinara sauce

½ cup mozzarella cheese, shredded

¼ cup parmesan cheese, shredded

1 tsp dried oregano
-
1 tsp dried parsley
-
1 tsp dried basil
Directions
Preheat oven to 400 C
In an oven safe baking dish, combine cottage cheese and tomato sauce
Mix in peppers, mushrooms, half the sliced pepperoni and herbs
Top with shredded cheese and add pepperoni and a few sliced veggies for garnish
Place in oven for 20-30 minutes until everything is melted
Remove from oven and serve directly from dish, or pair with pasta or cooked rice
