Yogurt Chia Parfait

Although it looks like a scrumptious dessert, this dish is chock full of protein and fibre. It doubles as a pretty parfait and a delicious nutritional powerhouse!
Ingredients

1 cup plain greek yogurt (or vanilla)
- 1 cup fresh raspberries
- 1/2 tbsp fresh lemon juice
- 1 tbsp raw honey
- 2 tbsp chia seeds
- 1/2 cup fresh blueberries
Directions
In a mixing bowl, combine raspberries, lemon juice, honey and chia seeds and mash until it becomes a jammy consistency
In a single serve glass jar, layer 1 inch of yogurt
Layer 2 tbsp jam and then layer of blueberries
Repeat layering yogurt, jam and berries
Top with fresh berries
Recipe Note
Full fat yogurt's consistency is best and has the highest vitamin profile. For a slightly sweeter dish, use vanilla yogurt instead of plain.
