Pesto Steak Sandwich

Turning plain leftovers into a creative new dish is one of my favourite activities! You can make individual sandwiches for lunch, or cut into segments and serve as an appetizer party platter.
Ingredients
- Crusty bread of choice
- Pesto sauce
- Brie cheese
- Sautéed onions
- Baby arugula
- ¼ ribeye or sirloin steak, grilled* - Aged balsamic vinegar
Directions
Toast the bread, and serve open-faced or not
- Spread pesto
- Place heated steak slices on the bread and immediately layer brie
- Add onions, arugula, and balsamic vinegar

*leftover or seared in a hot pan for 3 minutes per side
