Ingredients

1 large or 2 med bunches carrots, cut lengthwise in half

1 tbsp olive oil

1 tsp maple syrup

1/2 tsp sea salt

Fresh flat leaf parsley
Directions
Preheat oven to 425 F
In a large bowl, toss carrots with oil, maple syrup, salt and pepper
On parchment lined baking sheet, spread out the carrots
Bake for 20-30 minutes, until they begin to brown and fork tender (not mushy)
Garnish with parsley
Serve with whipped feta or tzatziki (optional)
