Ingredients

2 skinless boneless chicken breasts (or any type or protein that you prefer

1 cup quinoa or brown rice

1 cup corn niblets

1 cup black beans, drained & rinsed

½ cup shredded cabbage
-
½ cup diced tomatoes
-
½ cup diced bell peppers
-
½ cup broccoli florets, steamed

¼ cup pumpkin seeds
-
½ cup diced cheddar cheese
-
3 tbsp olive oil
-
1 tbsp orange juice
-
1 tbsp lemon/lime juice
-
1 tbsp honey
-
1 tsp dijon mustard

1 garlic clove, crushed

1 tbsp apple cider vinegar
Dressing
Directions
Preheat oven to 375 F
Season chicken and bake for 20 minutes (until internal temperature reaches 165 F)
Cook quinoa according to package instructions
Dice chicken when it’s done
Assemble all ingredients together in a large bowl or platter
Sprinkle pumpkin seeds and dressing
