A quick easy bright side dish
Ingredients

1 cup corn niblets
-
½ cup pomegranate seeds
-
½ cup sugar snap peas - cut small

1 tbsp. fresh mint leaves - cut

2 thin green onions (scallions) chopped

¼ cup red wine vinegar (or cane sugar vinegar)

¼ cup extra virgin olive oil
-
½ tsp flaky sea salt
-
½ tsp ground black pepper
Dressing
Directions
In a pan on medium high heat, toast corn niblets until they start to brown
Combine corn, pomegranate, peas, onion, salt and pepper into a serving bowl
Dress, toss and serve
