Chickpea Salad

If you're in the mood for a tuna salad sandwich but not in the mood for tuna, this one's for you! Full of fibre and no compromise on taste!
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 clove garlic

2 tbsp honey dijon mustard
- 1 tbsp olive oil
- 1 stalk celery, chopped

1 carrot, chopped

1 tbsp fresh lemon juice
- Salt and pepper to taste
Directions
In a food processor blend chickpeas, oil, garlic and honey dijon
- Transfer to a mixing bowl
Add celery and carrots and mix into the chickpea blend
Season with lemon juice, salt and pepper

Serving suggestions:
Pita or fresh bread (as a sandwich)
Garnish with fresh sprouts
