Chicken Harvest Bowl

Ingredients

1/2 prepared chicken, diced

1 sweet potato or 1 butternut squash, diced

1/4 cup roasted almonds, crushed

1 cup kale, shredded

1 cup, cooked wild rice or brown rice

1 large apple, diced

1/3 cup crumbled goat’s cheese
- 1/3 cup extra virgin olive oil
- 1/3 cup balsamic vinegar
- 1 tbsp grainy mustard
- Flaky salt and pepper to taste
Dressing
Directions
Preheat oven to 375 F
Toss potato or squash in 1 tbsp olive oil and bake 45 minutes
Add all the ingredients into a large salad bowl
Toss with dressing and enjoy
